It’s time for our take a break post – we’ve had great feedback the past few weeks about the recipe posts on Saturdays.  We all do need to take a break from the work world now and then.  It should be pretty obvious that most of our team loves to cook, and loves to eat.  Given your very favorable feedback and the volume of reads on these posts - we’ll probably pretty much make this a standard feature from here on out.

After indulging over the Memorial Day Weekend last week, here’s a healthier burger and one that you may not have tried in the past – Salmon Burgers with Dill Tarter Sauce.  Easy to make, taste great, and unique – what more could you ask for?

1 and ¼ lbs. skinless salmon fillet, cut into 1 inch chunks
1 cup of your favorite tartar sauce
4 tbs. fresh dill, chopped
½ tsp. coarse salt
1 tsp. fresh ground pepper

1 tbs. grated lemon peel
4 sesame seed rolls, split
Sweet onion slices
8 Bibb lettuce leaves
Hot sauce

To make the patties – combine the salmon, ½ cup of tartar sauce, 2 tbs. fresh dill, the salt and pepper in a food processor and pulse combine until salmon is coarsely ground.  Form into 4 – ¾ inch thick patties and chill for at least an hour before cooking.  

While the patties are chilling mix the remaining tartar sauce, grated lemon peel, and 2 tbs. of the dill. 

When ready to cook, preheat your grill to medium high.  Oil the grilling grate, and cook the 4 patties until done – 2 to 3 minutes per side.  Turn carefully.  While the patties are cooking, toast the cut side of the rolls on the grill, slather the bottom pieces with the prepared sauce, and top each roll bottom with a patty.  Top each patty with a dash of hot sauce, onion slices, and 2 lettuce leaves. 

We enjoyed this last night with a nice Sauvignon Blanc.
